Raw Maple Mochao Crunch Protein Fudge

Why should you make this fudge?

This protein fudge is so amazing. It requires no baking. It is chewy straight from the freezer. It tastes decadent, but has little sugar added, and all natural ingredients. It is mostly protein, cacao and nuts.

It is sooo much cheaper than any other “healthy” bar you will find in the supermarket.

It has espresso, maple syrup and chocolate in it.

I mean really, do yourself a favour and go ahead and make it. Now. 😉

Raw Maple Mochao Crunch Protein Fudge

Makes 24 little bars

Base Ingredients

Dry:

1 cup cacao or cocoa

1 cup chocolate protein powder (I use whey based, but you could probably use rice protein or some other for a vegan option)

2 cups raw cashews

3/4 cup sunflower seeds

1 tsp salt

contents of 2 vanilla bean pods, or 1 tsp alcohol free vanilla essence

1 tsp cinnamon

Wet:

1/2 cup goji berries, soaked in boiling water for 1/2 hour

1/2 cup dates

2 shots of espresso, or 1/3 cup strong instant coffee

Topping Ingredients

1/3 cup hazelnut or almond flour

1/4 cup cacao nibs

1/6 cup coconut oil

1/6 cup maple (this can be omitted or lessened and the amount swapped for coconut oil–I will probably lessen the amount, it was a bit sweet for me!)

Method

1. Add all the dry ingredients into a food processor. Starting on low and working up to a higher speed, process until mixture is fine.

2. Add the goji berries and blend. Once blended well, add dates and espresso. Blend well.

3. The mixture will be quite sticky. Line a brownie tin with waxed paper and press the mixture in as best you can. Fingers work best

4. Mix all the topping ingredients together and smother over the top of the fudge. Again, fingers work best.

5. Cover and place tray in the freezer for 1-2 hours. The fudge is ready to eat! Cut into squares or rectangles and keep in an airtight container in the freezer. Able to be eaten straight from the freezer.
