Coco-Berry Smoothie …with a Hint of Green {Paleo; Vegan}

I was so incredibly happy when I found pure coconut water at my local NTUC for $3.20 a litre. As soon as I saw it my entire smoothie-making future flashed before my eyes–like a premonition, if you will. So many coconut-water-filled smoothies. Me and this coconut water were destined to be.

I was even happier when I went to church yesterday evening and my beautiful friend Angeling gave me a packet of baby spinach as a present.

The best present ever. How did she know how much I would love this?

So what do you do when you have coconut water and spinach?

You drink them together, of course–in a beautiful smoothie blend.

This delightful drink was my post workout today after a kettlebell session with another church friend.

I totally have the best friends ever.

With all the goodness of natural electrolytes from the coconut water, antioxidants from the berries, potassium from the banana, and vitamins (K, A, folate, etc.) from the spinach–this smoothie is one delicious, healthful, vitamin-packed drink.

…you won’t taste the spinach, I swear.

Coco-Berry Smoothie {with a Hint of Green}

Makes one large glass

Ingredients:

1 medium green banana (this will be lower in sugar–for more flavour, use a ripe banana)

6 strawberries

2 heaped tablespoons natural yoghurt (use coconut yoghurt for vegan option)

1 cup of coconut water

1 handful of baby spinach

Method:

  1. Place all the ingredients in your blender/food processor.
  2. Blend. Pulse until the banana is fully mixed in, if needed.
  3. For a fancy-looking serve, cut a strawberry lengthways from the bottom up–but don’t cut all the way. Place on the rim of the glass.
  4. Drink the deliciousness immediately. ❤
