Strawberry Salad with Orange Balsamic Dressing and Pecans {THM:S, Paleo; Vegan}

I love salads.

For the longest time, I thought I didn’t like salads. For me, a salad used to mean iceberg lettuce, a chopped tomato and maybe some cucumber.

But now… I’ve realised that a salad can be anything you want it to be. Fresh, crisp and full of flavour with ingredients bursting with colour and as close to nature as they can possibly be, deviating as little as possible from the way God made them.

Enjoy the delightful play between sweet, tangy, and zesty in this fresh, light, and extremely tasty salad.

Strawberry Salad with Orange Balsamic Dressing and Pecans {THM:S, Paleo; Vegan}

Serves 2

Ingredients

Salad

1 cup greens, torn (if necessary)

1 yellow capsicum, sliced finely

6 strawberries, sliced

1 small handful pecans, chopped or crushed

1/2 avocado, chopped (optional)

Dressing

1 tbsp coconut oil

1 tbsp balsamic vinegar

Juice of 1/2 one orange

pinch of sea salt

Method

  • Prepare all salad ingredients and divide between two bowls .
  • Mix together the dressing  ingredients and pour over salads.

Too simple and so beautiful. Enjoy. ❤

[EDIT: There’s approximately 5g of carbohydrates from the orange and strawberries per serving in this meal (not counting the non-starchy veg. This falls under an “S” meal for THM]
