Spiced Pumpkin, Apple, and Lime Crockpot Soup {THM:E, Paleo; Vegan}

Since overcoming the emotional damage that my pumpkin soup disaster caused me, I have had a little success in the area of pumpkin soup making. I can now make pumpkin soup without ruining it.

So… even though I realize that perhaps I am too late to join the barrage of pumpkin recipes, here is another delicious twist on pumpkin soup for you.

Spiced Pumpkin, Apple, and Lime Crockpot Soup {THM:E, Paleo; Vegan}


1 small pumpkin, or 1/2 large pumpkin, peeled and roughly chopped

2 green apples, peeled and cored

1 large onion, peeled and diced

3 tablespoons of ghee (leave out for “E”)

1 tsp cinnamon, ground

1/4 tsp nutmeg, ground

1/4 tsp ginger, ground

1/2 tsp Himalayan sea salt

1/2 tsp oregano, dried, whole

1/2 cup coconut milk, fresh or canned (plus extra for serving, if you wish)

Lime wedges, to serve


  1. Place the prepared pumpkin, apples, onion, ghee, and spices in a medium/large crockpot.
  2. Cover with water and cook on low for 6 hours.
  3. Transfer soup to a blender, add coconut milk (not for “E”), and blend until smooth and creamy.
  4. Serve with a lime quarter for some extra tang (add a dollop of non-fat yoghurt for E”).

I also added some rocket… because it’s pretty. It’s my (rather amateur) attempt at food styling. It didn’t taste bad either. 😉

I have a feeling that my Vanilla Spiced Roasted Cashews would taste really good on this as well.

For my husband, I served him this soup with my Low-knead Wholemeal Bread.
