Salted Caramel Baked Apple Bloomers with a Dark Chocolate Centre {Paleo; Sugar Free; Vegan}

This recipe was born out of this amazing (though sugar filled) recipe by a friend’s request. The result was totally knock-your-socks-off good! Even my husband loved them, ditching his cinnamon bun with icing for one of these gooey, sweet, and slightly chewy little beauties.

These are faaaar too easy and delicious not to try.

Salted Caramel Baked Apple Bloomers with a Dark Chocolate Centre {Paleo; Sugar Free; Vegan}

Serves 4

Ingredients

4 green apples

20 large dates

2 tbsp butter (or coconut oil)

1/2 tsp cinnamon

1/4 tsp salt

4 tsp melted coconut oil

4 squares extra dark chocolate (at least 70%)

Method

  1. Place dates in a saucepan and cover with water.
  2. Boil until mushy (mine were tough, so it took 35 minutes).
  3. Drain the water.
  4. Blend the dates with cinnamon, butter, and salt.
  5. Cut the apples like this recipe demonstrates.
  6. Place a square of dark chocolate in the centre
  7. Put a generous glob of the date mixture (the mixture does about 4 apples) on top.
  8. Bake until soft (mine took 45 minutes) – half way through, when the apple is beginning to spread, take it out and spread the caramel over it a bit more along with 1 tsp coconut oil to each apple, getting it in the crevices.
  9. Serve immediately with ice cream, cream, vanilla maple coconut cream, or natural yoghurt on top.

Boil dates and prepare mixture.

Prepare the apples and place chocolate in the centre and caramel on top.

Bake until the apple is soft and spread out.

Top with yoghurt, cream, ice cream or coconut cream.
