Berry Coconut Amaze Balls (Trim Healthy Mama “S” ~ Low Carb ~ Keto)

Oh my. Ever since I made these last night, I can’t stop devouring these delightful little balls of goodness. They remind me of a mixture of White Christmas and Coconut Ice – Australian sweets I used to enjoy in my youth. 

I think I ate 5 while taking these pictures. Seriously, it’s crazy how good these are. My hubby even said they were “pretty good,” which anyone who knows my hubby will know means they are amazeballs because he hates sweets with no sugar. 

They’re also super easy to make, ready in 2 hours, and if you are following the THM plan you probably have all the ingredients in your cupboard already. 


A quick note on the protein I use: I use MRM’s Natural Protein Concentrate. It’s by far my favourite. I have the strawberry and the vanilla and I use it every. single. day. The strawberry is all-natural, sweetened with stevia, flavoured with REAL freeze-dried strawberry pieces, and tastes AH-mazing! 

NOTE: Trim Healthy Mama DOES suggest you should use isolate – so if you are a purist you can use MRM’s Vanilla Protein Isolate. Up to you!

Berry Coconut Amaze Balls ~ Trim Healthy Mama “S”

Makes 2 lunch box-sized containers full of amazeballs


2 cups shredded coconut (I use this one)

1 cup almond meal 

1 scoop vanilla or strawberry flavoured protein (I like MRM’s Natural Protein – it’s very clean, but Trim Healthy Mama suggests that you use Isolate)

1/5 cup erythritol (I use this one)

1/5 cup xylitol

1 1/3 cups coconut oil, melted 

1/2 tsp natural raspberry or strawberry flavouring (I use this one)


  1. Mix together all the ingredients except for coconut oil and flavouring
  2. Mix in the remaining ingredients.
  3. Roll the mixture into bite-sized balls.
  4. Freeze on a tray lined with baking paper for 2-3 hours.
  5. Transfer to an airtight container and keep in the freezer.
